继日月光店和大宁店之后 ,蔡嘉茂名店和环贸店陆续开业。蔡嘉坚持采用法国黄油、新鲜奶油制成甜品。拿破仑、榴莲蛋糕以及草莓蛋糕等都是人气产品,如今在上海已颇有群众基础,每天到各店来取预定蛋糕的客人络绎不绝。在环贸店,蔡嘉将“轻食奢酒”风引入店中,选用Enomatic 葡萄酒保鲜分杯系由侍酒师吕杨为其每月精选几款酒搭配蓝纹奶酪或者甜品。此外蔡嘉还推出伊比利亚5J火腿与自制有机酸奶。
